This one is a real store cupboard lunch and is easy to make the evening before for something good to eat at lunch.
- 1 Chicken Breast
- 1 tbsp Pesto
- 6 Sun Dried Tomatoes
- 1 Spring Onion
- 75g Spirali Pasta
- 1/2 tsp Garlic Granules
Start off by cutting the chicken into thin strips. Season well and in a hot pan cook with the garlic until its browned all over and crispy, leave to one side.
Cook the pasta in boiling salted water until al dente and then drain and add to the pan you cook the chicken in (why create more washing up using a bowl?) Finely chop the tomato and spring onion and along with the chicken add to the pasta.
Finally, add the pesto and give it all a good mix around making sure that the pasta is nicely coated with the pesto. Stick it into a tub and take it to work with you.
