Now then I haven’t made puddings for ages but the other week I had a bunch of people over and you have to offer a selection don’t you? When in a restaurant if I order pudding, (I’m normally a starter and main kind of person) I always order the chocolate one, what ever that may be, so here are two for you.
Chocolate Brownie (Michel Roux – The Collection 2012 Quadrille Publishing Ltd)
- 200g Butter
- 200g Dark Chocolate (I used Lindt 80%)
- 4 Eggs
- 220g Brown Sugar
- 120g Plain Flour (I used Self Raising)
Now then, the great man uses pecans in his brownies but I left them out in favour of 100g of chocolate chips. In a ban marie melt the butter and the sugar together. In a food processor whip the eggs and the sugar. Once the chocolate butter have melted together fold the egg mix into the chocolate along with the flour. Add the chocolate chips and then transfer to a baking tray. Cook the brownies for 25 minutes at 180c and then leave to cool completely before portioning them up.
Oreo Cheesecake
- 1 Packet Oreos
- 2 Packets of Cream Cheese
- 100ml Double Cream
- 2 tbsp Icing Sugar
In a food processor blitz the oreo until they are oreo dust. In a bowl whip the cream cheese and cream with the icing sugar. In a dish or bowl, put the oreo on the bottom and then cover with the cheese mixture. Leave it in the fridge until you serve. It wont look pretty when you serve it but it will be tasty!
