Satay Octopus and Prawn Udon

I’ve got into making my own Satay sauce recently and I’ve put it on everything, this one is no exception.

  • 1 Small Octopus (Cleaned)
  • 8 Raw King Prawns
  • 1 Packet Amoy Udon Noodles
  • 50g Samphire
  • 1 tbsp Crunchy Peanut Butter
  • 15ml Kikkoman Soy Sauce
  • ½ tsp Cayenne Chilli Powder
  • ½ tsp Ground Ginger
  • 100ml Boiling Water

Firstly, heat your wok until it’s screamingly hot. Add a little oil and stir fry the octopus, remove from the pan and do the same with the prawns. Once done leave to one side.

In a small sauce pan add the peanut butter, cayenne, soy, ginger and boiling water. Mix together until the peanut butter has melted into the water. Leave to one side.

In the same wok stir fry the noodles, and then add the samphire. At the same time heat the sauce mixture so that is thickens a little.

Re-add the octopus and prawns to the wok followed by the sauce. Give everything a good mix around making sure it’s all nicely coated. Finally, put into a bowl and enjoy.
