Mackerel Sandwich

Sometimes the same old sandwich filling can get boring. I have tried in my time, what I call the ‘Reese’s’ Sandwich. One side Peanut Butter one side Nutella, stick together (don’t look at me). This one is slightly more interesting than sandwiches from my student days.

  • 2 Fresh Mackerel Fillets
  • 2 Slices Gi Bread
  • 1 tsp Dill Mustard (Atkins and Potts)
  • Handful of Watercress
  • 3 tbsp Plain Flour
  • Oil for frying

First off stick the mackerel in a freezer bag with the flour and give it a good shake. Once the mackerel is coated in the flour, in a hot pan fry in the oil for about 3 minutes either side (I like it to be crispy).

While the mackerel cooks put the watercress on one slice of bread and once done top with the fish. Put the dill mustard sauce on top and close the sandwich, it is a sandwich after all… Cut in half and devour.
