Chilli Con Carne with Cauliflower Rice

This is something I make once in a Blue Moon, with the Blue Moon a way off but a Total Eclipse last week, it seemed like a good time to make a Chilli. Well, that and the fact I had some Beef Mince that needed to be used. I think the Eclipse is slightly more poetic. I cooked this in the morning and left it till the evening to let the flavours mingle.

  • 150g Beef Mince
  • 1 Small Tin Kidney Beans
  • 1 Small Tin Tomatoes
  • 3 Field Mushrooms
  • 1 Red Onion
  • 1 tbsp Chilli Con Carne Powder
  • 1/2 tsp Garlic Powder
  • 50ml Water
  • 1 Beef Oxo Cube
  • 150 Cauliflower
  • 1/2 tsp Turmeric

Start off by chopping up the onion and mushrooms then, in a large pan brown the beef mince. When browned add the mushrooms and onion and give them a good stir around. Next, add the tomtatoes, kidney beans and the water and cook for about 5 minutes on a high heat. Finally add the chilli con carne powder (yes I cheated but it’s easier) paprika, oxo and garlic powder, give it all a stir and simmer for another couple of minutes.

For the ‘rice’ take the cauliflower and chop finely or if you like, blend it until it looks like rice. In small pan stir fry the cauliflower with the turmeric, I add a little water to help it cook. Lastly, chuck it all in a bowl and dive in! This made two servings of the chilli, have the rest for lunch with some rice cakes!
