Buffalo Chicken and Eggs

A quick lunch or fast evening meal, it’s that easy.

  • 1 Small Chicken Breast
  • 2 Eggs
  • Handful of Rocket

There’s not really much to say with this one. Season the chicken well with salt and pepper and chuck it in a wok until its nice and crispy on both sides. Remove the chicken and leave in a warm place to rest while you fry the eggs. I like mine sunnyside up, but this will work however you like your eggs. Once they’re done, stick it all on a plate and add the rocket. That’s it… simple right?
