Portly Cooks | Can’t Be Bothered Steak and Egg Baguette

Cant be bothered baguette

Some nights you really don’t want to try that hard for food. I love faffing around in the kitchen more than anyone but sometimes you need simple fast food. This is where this baguette is a hands down winner.

  • 250g Beef Skirt
  • 3 Eggs
  • Handful of Rocket
  • 1 Soft White Baguette
  • 1 tsp Garlic Powder
  • Salt and Pepper
  • Oil for frying

OIl and season the steak with the garlic, salt and pepper. Heat a pan until screamingly hot and then chuck in the steak cooking for about a minute and a half on each side. You can cook it for longer but I like my steak on the rare side.

While that’s doing, cut the baguette in half and chuck in the rocket. Remove the steak from the pan and leave to rest in a warm place. Give the pan a rinse and crack the eggs and cook until just done. Again, I like mine sunny side up. Something I learned in the US when asked for the first time ‘How do you like your eggs?’.

When the eggs are nearly done thinly slice the steak and arrange on the baguette before topping with the eggs. Put the top on and enjoy. I had mine with French’s mustard.
