Chicken and Butterbean Stew

Chicken, Paprika, Butterbeans and Passata… This is what I had to work with the other evening when I got in. Part of the never ending problem question… What can I eat? Some would say I should meal plan, but where is the fun in that? So this…

  • 1 Chicken Breast
  • 1 Small Tin Butterbeans
  • 1 tsp Smoked Paprika
  • 100g Button Mushrooms
  • 2 Oxo Chicken Stock Cubes
  • 100ml Passata
  • 1 tbsp Worcestershire Sauce
  • 1/2 tsp Garlic Powder
  • Salt and Pepper

Chop the chicken into bitesized chunks and then in a large pan fry until just starting to brown. While that’s cooking, in a boil make up 200ml of chicken stock using the cubes, add the passata to this and stir. Add the passata mixture to the pan along with the worcestershire sauce, garlic powder and paprika.

Give it all a good stir and add the butterbeans and mushrooms, then leave on a high heat to reduce the liquid, stirring occasionally. It should take about 5-8 minutes. Once it’s all reduced give it a final stir, transfer to a bowl and grab a spoon!
