I cheated a little bit with this one, I bought those packs of chicken flavoured noodles you can get from supermarkets. If I’m honest Tom Yum Shrimp flavour was a university staple when I was a student. It’s quite easy to jazz up those store bought noodles though.
- 2 Packs Chicken flavoured noodles
- 25ml Kikkoman Soy Sauce
- 25ml Fish Sauce
- 25ml White Wine Vinegar
- A Handful of Beansprouts
- 5 Closed Cup Mushrooms
- 1 Chicken Breast
- A Handful of Fresh Spinach
It’s simple really, in a wok, fry the chicken breast, if it’s a particularly chunky one cut it in half. You want to make sure its dead crispy on all sides. In the same pan as the chicken cook the mushrooms. For the noodle broth take those little flavour packets from each of the packs and mix them with some hot water, the soy sauce, fish sauce and white wine vinegar and leave to one side.
Then in a saucepan with some water boil the noodles until they’re soft. Drain them and stick them in a bowl. Cover them with the broth and then garnish with the beansprouts, spinach, chicken and mushrooms. I chunked my chicken up but if you want to keep it whole, go for it!
