Black Pudding Eggs Benedict

So once again this one comes from listening to a BBC Food Programme Podcast about Blood. It was a really interesting episode actually and the key thing I took away from it was swapping out the ham from Eggs Benedict for Black Pudding. I added bacon to mine as lets be honest everything is better with bacon!

If you can be bothered here is how to make Hollandiase…

  • 1/2 English Muffin
  • 1 slice Black Pudding
  • 1 tbsp Hollandaise Sauce (I used Atkins and Potts)
  • 1 rasher Back Bacon
  • 1 egg

Pretty simple really if you’re not making the hollandaise cut a muffin in half and toast it. Fry the bacon and the black pudding together. In another pan, boil some water and poach the egg. Once it’s all cooked, stack it up all cheffy like and top with the hollandaise.
