So I’m back on what I call my numbers… My Fitness Pal. After a week of indulgence and seeing the scales increase their read-out, I thought I should do something about it.
- 2 Red Onions
- 4 Small Mushrooms
- 1 Leaf Savoy Cabbage
- 1 Slice of Bread
- 1 Back Bacon Rasher
- 1 Egg
- 15ml Franks Red Hot Wings Sauce
It’s dead simple this, and you can double it for however many people you’re feeding. Slice the onions and dice the mushrooms. Cut the woody section from the centre of the cabbage and then shred it. Heat a little oil in a wok or heavy bottom pan and stir fry them.
Thinly slice the bacon rasher and add that to the onion, mushroom and cabbage. Give it a good stir and turn down. In another small pan bring some water to the boil and poach your egg. While poaching the egg, stick your bread in the toaster.
Once it’s all done, pile everything up on the toast (you can butter the toast if you like, I didn’t) and then drizzle with the hot sauce.
