Portly Cooks | Tuna Topped Twice Baked Potatoes | Vegetarian(ish) Week

Who doesn’t love a good baked potato? I’m not talking those god awful ones that you zap in the microwave for a few minutes, I’m talking the real deal, these are twice baked. Also, I’m aware that this is my Vegetarian Week and I’ve used Tuna in this recipe but… well it’s tasty

  • 2 Potatoes
  • 1 Tin Tuna
  • 1 Large Gherkin
  • Small handful of Rocket
  • a pinch of Garlic Powder
  • 20g Mayonnaise
  • Black Pepper
  • Salt

This one works best if you have a spare morning to get ahead. First pre-heat your oven to 200c and then coat the potatoes in a little oil and season well with the salt.

Put the potatoes into the oven and bake for 1 and a half hours, turning them over about half way through. Then, leave them to cool. You can of course just make this straight away but I made mine as a get ahead meal.

When you get back from work (as i did) it’s time for the second bake, pre-heat your oven again to 200c and bake the potatoes for another 20 minutes.

While the potatoes are in the oven, drain the tuna, chopped the gherkin and parsley and then mix in a bowl. Add the mayo, garlic powder and a good crunch of black pepper and mix again.

Take out the spuds and top with the tuna mayo mix, what could be simpler?
