Portly Cooks | BBQ Chicken Thighs | Midweek Meal


Food that you can forget about or food that takes minutes to make is the perfect recipe for the middle of the week, no? These thighs are kind of both in one package. You can even prep everything the evening before and then all you need to do is cook it, what could be simpler?

  • 3 Chicken Thighs
  • BBQ Sauce (Your favourite one)
  • Red Cabbage
  • Onion
  • Rocket
  • Mushrooms
  • Red Peppers

You’re going to want to shred or slice thinly all of the ingredients excepting the chicken. Next, stick the chicken in the oven at 220c for about 15 minutes, until the chicken skin is super crispy.

Take the chicken out, smother/drizzle (whatever your preference) with the BBQ sauce, put back in the oven and turn the oven off.

 In a wok stir fry the vegetables, season well and when they are nearly done, add a bit of the BBQ sauce and serve, alongside the chicken. That’s your dinner, done!
