Portly Cooks | Roasted Chicken and Homefries

Roasted Chicken, is there anything more comforting? The nights are growing darker by the day and even the thermometers are looking at winter sun deals on Expedia. This dish should warm you and your soul in the cold winter evenings.

  • 2 Chicken quarter portions
  • 1 large potato
  • 1/2 medium sized courgette
  • 1/2 red pepper.
  • 1 red onion
  • 50g bacon lardons/pancetta
  • 1/2 teaspon Paprika

To begin, cut the potato into small cubes. don’t worry about peeling it, it all adds to the flavour. Then, in some salted boiling water cooked the potato cubes until part cooked. Drain and cool, you can even do this the day or even two days before and keep them in your fridge.

For the chicken, rub with a little oil and season well, sprinkle with the paprika and roast in the oven at 200c for 35minutes, until the skin is nicely crisp. While the chicken is cooking dice the rest of the ingredients and together with the potato cubes cook in a little oil in a heavy bottomed pan. Once the vegetables and chicken are cooked, plate them up, laying the roasted chicken on top of them.
