It’s Monday night, you really cannot be bothered with food right!? Well this one won’t waste any of your time! It takes hmm about 10-15 minutes and gives you an excuse to open a bottle of red wine!
- 100g bavettine/spaghetti
- 1 shallot
- 4 sundried tomatoes
- 1 fresh tomato
- 100ml passata
- Splash of red wine
- Seasoning
- 1/2 ball of mozzarella
Pasta, cook in boiling salted water until just done, that should be around 5-7 minutes. While the pasta is cooking in a small pan cook off the onions and fresh tomato.
Once they have cooked down add the passata and wine and give it all a good stir. Once the pasta is done drain and add the sauce to the pan. Add the sun dried tomatoes and give it all a good stir making sure the pasta is well coated.
Finally serve in a bowl and rip the mozzarella over the top.
