Is there anything more comforting than a big pile of noodles just waiting for you to dive in? in my opinion very few things come close to noodles when you’re craving just that. This one was a kind of I need to use up what I have in the cupboards kind of dish.
- 2 nests of Whole Wheat Blue Dragon Noodles
- ½ red pepper
- 40ml Kikkoman Soy Sauce
- 1 chicken breast
- 100g asparagus
- 100g pak choi
Start off by cutting the chicken into thin strips so it cooks fairly quickly, you don’t want to be faffing around with this dish. Next cut all the vegetables into thin strips, for the asparagus I just cut them into three as they were quite thin to start with. In a wok heat a little sesame oil and stir fry the chicken for about 2 minutes, next add the vegetable and continue to cook.
In another pan re-hydrate the noodles in some salt simmering water until the nest begin to come apart. Drain them and then add them to the wok with everything else. Finally, pour in the soy sauce and make sure everything is nicely coated. Transfer to a plate or bowl and dive right in! Comfort food at its best.
