Fish finger sandwiches! They are the stuff of childhood, now as an adult a little piece of sandwich nostalgia. Having said that though the fish finger sandwich has some what of makeover and become all trendy!
You can make them out of anything too, cod, salmon, smoked haddock anything you like really. It’s a good way to get kids into fish too! I got mine from my local fishmonger as they were selling them ready made for less than the price of a coffee! Always a winner on a cold winters day.
- Cod cut thinly into strips
- 1 beaten egg
If you’re going to make them, it’s really simple take your fish, I used cod, dip it in the egg and then into the breadcrumbs. Repeat until you’ve used all your fish. Cooking wise it’s up to you, you can; fry, bake or even grill if you like. Once they’re done stick them between two slices of bread. The white sliced standard stuff. I think that’s how they should be served, on the squidgy white bread, putting them on nice bread just ruins the nostalgia factor for me.
