Some meals are best when they are left alone. Fish and Chips is one of those, if it isn’t broken don’t fix it right? However, what if you don’t fancy getting out the fryer or you have some fantastic fresh fish that you don’t want to stick in batter?
This is what happened to me, this isn’t a culinary revelation its 3 ingredients… but its one to bear in mind as the meat feast that is Christmas begins to creep over the horizon. I think that this would be the perfect Christmas Eve dinner. It’s fast, it’s tasty and, a little bit indulgent too!
- 2 slices Wild Halibut
- 200g Oven French Fries
- 100g Samphire
As I said this isn’t difficult. Cook the French fries in a high oven for about 15 minutes so they crunchy, I put salt, pepper and, garlic powder on mine before they go in. in a small pan cover the samphire in water and bring to the boil then remove from the heat and leave it to cook in the water. Finally, heat a wok or heavy bottomed pan with a little oil and lightly fry the fish on either side for about 3 minutes a side. Serve and enjoy.
