Special Fried Cauliflower ‘Rice’

special fried cauliflower riceSpecial fried rice is a take-out staple and one of my favourites this one however is a little different.  For one, it has no rice… I’ve been experimenting recently with different vegetables and have played with making cauliflower couscous and also buffalo style cauliflower.

What I have discovered is that rice or even chicken in the case of the buffalo style is just a carrier for the flavour hit I’m craving rather than a key point of the dish.  Now, don’t get me wrong I love real deal Buffalo wings, real fluffy couscous and of course real rice.

For the most part as I have said, they really are just carriers of flavour. I have found via reading things online and talking to chefs that cauliflower is pretty versatile for making low calorie options to favourite dishes such as this special fried ‘Rice’.

  • 350g cauliflower
  • 160g sweet corn
  • 2 rashers streaky bacon
  • 100g peeled prawns
  • 1 large field mushroom
  • 100g courgette
  • 1 red onion
  • 100g broccoli
  • 30g samphire
  • 4 tbsp soy sauce
  • 2 tbsp mirin
  • 1 egg

This should be enough to make at least 2 main meals or if you’re serving it as a side then it’s good to feed around four people. Right then, to start off you’re going to need to prepare all of the vegetables. It’s pretty simple, everything needs to be diced so it is fairly small.

For the cauliflower if you want to you can put it into a blender and give it a whizz until it’s about the size of rice grains. Having said that, to save yourself sometime, put it all in a blender until every thing is roughly the size of grains of rice.

For the bacon cut it into small lardons and then in a hot wok with some sesame oil fry it for about 2 minutes followed by the prawns.  Once you have done that gradually add all of your vegetables. Cook this off for about 10 minutes and then gradually add the soy sauce and mirin. I put all of it in at once and it didn’t work so I have to drain it and then add it gradually so that all of the flavour was absorbed by the vegetables.

Next, beat the egg and then in a small frying pan make yourself an omelette. Once that’s ready you can take it out and cut it into small strips. Then add those to the fried ‘rice’ and give them a good stir through, transfer to a bowl and enjoy!

So, the prep is a bit of effort lots of chopping! Or of course you can use the blender, its all in one large pan or wok and then gradually add the soy and mirin and then the egg. Simple.
