It’s been a while since I’ve done any real cooking. I have to be honest recently I have been really rather lazy when it comes to food, but finally I have something worth talking about. When I was out and about the other day I found a locally grown Japanese style cabbage. I just needed a recipe to make with it and I think that this one works really rather nicely and you can pair it with virtually anything!
- 1 chicken breast, sliced into strips
- 30g ‘Flava it’ BBQ Marinade (yeah I know it’s cheating)
- ½ Japanese cabbage, shredded
- ½ red bell pepper, diced
- 7-8 closed cup mushrooms, quartered
- 1 red onion, sliced
Start off by putting the chicken into a freezer bag or a bowl (whichever you prefer) with a splash of oil and leave it to marinade for at least 15 minutes. This will give you time to prep the rest of your ingredients so that you are ready to go.
Bake the chicken strips in a 200 degree oven for about 20 minutes making sure you turn them over halfway through. After you have turned your chicken you can stir fry the rest of your ingredients. I start with the mushrooms first as they need slightly longer than the rest. Make sure you season well and then add the rest of the ingredients and stir fry for around 5 minutes. Now you should be ready to go! Before you dive in, drizzle a little BBQ sauce over the chicken to finish it off. Enjoy!
