I’ve been trying to do something different with the food I’ve been making recently. You know how you get into a rut of cooking the same stuff over and over A. because it’s easy and B. because you know you like it.
I love squid, I’ve been meaning to mix it up a bit, my go to thing is to dreg it in flour with a ton of spices for example, Togarashi which is a Japanese spice blend. Aside from the squid I had a lot of stuff to use up in my cupboards and fridge so it was kind of mismatched but actually kind of worked!
- 130g Squid, cleaned and cut into rings
- 140g lemon and coriander couscous
- 125g asparagus
- 200g grilled pepper antipasti
- 60g red onion, sliced
As I said this was a bit of a mix up meal but bear with me it does work! Right, first heat a pan (as always I used my wok) a give it a drizzle with some oil. While that’s heating up pour boiling water over the couscous just enough to cover and leave that to do its thing. In another pan simmer your asparagus until tender.
Fry off the squid and add the peppers and onion to the same pan and cook for a little longer. Once the asparagus is done, cut it into chunks and along with the couscous add it to the pan. Give everything a good stir around and then stick it in a bowl and enjoy!
