Here’s just a quick one for you. Now, I’m not a massive fan of the Oyster… Raw that is. I’ve tried them cooked and they are lovely just steamed in their shell (they taste like large mussels). But now I have tried something a little different. Tempura Battered Oysters! They’re fantatastic and work superbly well my Sweet Chilli Relish! You’ll need:
- 6 Fresh Oysters (out of the shell)
- 100g corn flour
- 150g plain flour
- 1 tsp baking powder
- Alternatively you can buy a pack of ready to go tempura batter.
- Iced water
- 2 tbsp Sweet Chilli Relish
Simply mix everything together in a bowl until you get a light batter, then grab your oysters and dip them in the batter and fry in hot oil. You can deep fry them, but I tend to use a wok with about an inch or so of oil in the bottom. Serve with the Sweet Chilli Relish and a slice of lemon. This makes a lovely starter!
