Sometimes all you need after coming back from work is something quick and easy. Pasta is always a good starting point for an easy dinner, just chuck it in some water and get cracking. The only ‘hard’ part of this dish is the sauce and all that needs is a little time to reduced down. However whilst the sauce is reducing you can do your pasta and fish. Everything will be ready in around twenty minutes so you’ll need:
- 2 Fillets Bream
- Finger length piece of chorizo (cubed)
- 1 rasher of bacon (chopped)
- 4 mushrooms sliced
- 2 tbsp balsamic vinegar
- 1 ½ tins chopped tomatoes
- ½ onion chopped
- 1 clove garlic (crushed)
So this is nice and quick, start cooking your pasta, next into a saucepan fry off your onions, then add your garlic, chorizo, bacon and mushrooms and cook them for little longer. Then, throw in the balsamic and give it a quick stir then the tomatoes put on a high heat and reduce stirring occasionally. Whilst your sauce is reducing pan fry your bream and leave to one side until the pasta and sauce is done. Once everything’s ready drain the pasta and into the same pan add the sauce give it a stir, transfer to plates or bowls and serve the fillet of bream on top!
