Garlic and Onion Mushrooms

Last night I was scrabbling around the kitchen trying to find a tasty side dish to go with some Sea Bream.  There was not a lot in the fridge except, mushrooms and an onion.  So that was chosen to go alongside the Bream.  I didn’t really have an idea what else to do with it, but when cooking onions I always use garlic (more for the smell of the cooking than anything else).  So for this side dish you’ll need:

  • 5-6 Mushrooms sliced
  • ½ Red Onion sliced
  • 1 Large Clove Garlic crushed
  • 50g butter

In a pan with a little oil, gently fry off the onions.  After about 2 minutes you can through in the mushrooms and the garlic and give it a good stir around so that the garlic distributes evenly throughout the pan.  Leave to cook on a low heat for around 7 minutes. Just before you serve melt the butter into the pan and give it a final stir around.  Sprinkle in some chopped parsley and serve!
