Do you ever have those times when you go to the fridge and just stare at the lack of interesting things inside it? Well last night that was what happened to us. We were in search of some nice side dishes to go our Meatloaf but, all that was in the fridge was a red onion, some green beans a rasher of streaky bacon and a sweet potato. After some thought of what to do with this random assortment, we decided upon Red Onion, Bacon and Beans and Paprika Crinkle Cut Sweet Potato. Actually they worked rather well as sides, so you will need;
Red Onion, Bacon and Bean Side
Ingredients
- 1 sliced red onion
- 1 chopped smoked streaky bacon rasher
- 1 handful of green beans cut in half
- 1 garlic clove crushed
- Worcester sauce
- Red wine vinegar
- Salt and pepper
Method
- Par boil the beans in some salted water for around 3 minutes, in another pan fry off the garlic the onion and the bacon until the onion has softened slightly.
- Add the beans to the frying pan and cook for a further 3 minutes, season the mixture in the pan and add a splash of Worcester sauce and red wine vinegar for flavour.
Paprika Crinkle Cut Sweet Potato
Ingredients
- 1 sweet potato
- 2 tsp smoked paprika
- Salt and pepper
- Oil
Method
- Cut the potato into round discs (we had a crinkle cutter so we used that)
- Par boil the potato and drain, in the same pan add some oil the salt and pepper and the paprika and stir with the heat on for about a minute until the potato is well coated with the paprika
- Place the potato on a baking sheet and roast until crispy
