At the weekend, we at Portly Gourmet attempted to make a sweet chilli relish, we’ve seen it being sold in shops of varying sizes from the big supermarkets down to the independently owned stores. The one problem we’ve discovered is that it’s not got enough kick or even it sometimes has too much of a kick. We’ve never found one with the right balance of flavour and heat so, we decided to make our own, having ‘googled’ a few recipes online and not found any of them particularly appealing, we decided that we would mix them all together taking our favourite parts of each of the recipes and turning them into a super recipe! So after much chopping, dicing, crying (due to onions of course…), bubbling and stirring, two hours later we had our Sweet Chilli Relish and it tastes rather good . So if you fancy giving it a whirl… you will need:
- 8 red peppers (deseeded and chopped)
- 10 red chillies (chopped)
- finger-sized piece fresh root ginger , peeled and roughly chopped
- 8 garlic cloves , peeled
- 1 tin chopped Tomatoes
- 3 shallots (Chopped)
- 750g golden caster sugar
- 250ml red wine vinegar
